Spring Rolls

Happy 1st day of Spring friends!! Even though it is raining here in Houston this morning, I know it will turn out to be a beautiful afternoon! Today I thought I would share with you how easy it is to make spring rolls. I decided to make shrimp spring rolls and the best part is that you can add whatever your heart desires to your spring rolls!  

I decided to use cucumber, cilantro, green onions, lettuce and shrimp.
Some people use mint, carrot slices, sprouts, etc.
I would also like to note that I really do not measure out any of the veggies, but I do count them as pieces  So for example we made 8 spring rolls then I will have 8 leaves of lettuce, 8 pieces of cucumbers, etc. That is what is so fun about making these!! 

I love walking down the international aisle there are so many cool items on display! For spring rolls you will need rice paper that is round (like the pic) and your choice of dipping sauce. I like sweet chili sauce (can be used on anything) and peanut sauce!

I fill a plate with warm water to dip the rice paper in for about 30 seconds.

After I place the rice paper on my cutting board and start adding my toppings. 
I then start the fold from the sides in.

Then I roll from the bottom up.

TADA!!
