Cinnamon Sugar Pecans



Our pecan tree is super giving right now. I mean every minute a pecan or two falls....seriously they are everywhere! We are not quite sure if that means we will actually have a winter this year or if we just got enough rain this summer? Either way there are a ton that fall everyday and even the squirrels cannot keep up!



To make things even more interesting Greg and I are not the biggest fans of them. However, since I am from a small town.... I cannot let anything go to waste. Seriously!

Enter Cinnamon Sugar Pecans, now we are talking! This recipe is really easy and pretty darn tasty!


CINNAMON AND SUGAR PECANS

 INGREDIENTS

1 large egg white
3 cups pecan halves
1/3 cup cinnamon & sugar
*For a cinnamon sugar mixture:
use one tablespoon cinnamon to 1/3 cup sugar.
Be sure to use good quality cinnamon.
2 teaspoons good vanilla
1/4 teaspoon salt
Directions
Preheat oven to 300 degrees.
1. Whisk the egg white in a cup. Pour the egg whites over the nuts, stirring until the nuts are coated with egg white.
2. In a small bowl, stir the cinnamon, vanilla, sugar, and salt together. Add the cinnamon sugar mixture to the nuts, a little a time, while stirring.
3. Spread the coated nuts on an ungreased baking sheet. Bake for 20 minutes without stirring. Use a spatula to remove the nuts from the hot baking sheet immediately. Allow to cool thoroughly before storing in tightly closed container. Store in a cool place.





Now they are ready to enjoy! We decided to have an impromptu Halloween get together tonight, so I hope our guests enjoy them!!

Weekend Update


Friday-

Friday evening we were invited to a pumpkin carving party! We decided to stop by our favorite food truck, Good Dog Hot Dog! This truck is from the Heights and we just love them! More about them here.

Saturday-

Saturday was a very busy day, had a 5k that morning at 8am. My cousin has Cystic Fibrosis and every year we participate in the Great Strides 5k, taking steps to cure CF!  I hope to get some pictures from my dad to post! To learn more about Cystic Fibrosis click here.

After the CF 5k we had the UH football game and we really beat UTEP!!!! I'm so proud of our Cougars! The weather was amazing too! 

Since it had been a long day we had been going back and forth on if we should go out and play or not. I bought a costume last year and since my Saturday was the exact same schedule I never ended up wearing it because I was too tired to do anything. After the game on Saturday I caught a major wind and decided to dig the costume out of the attic and go out!!

Sunday-

I tried to sleep in as late as I could. Ran errands, we went to church and at lunch I wanted to have a picnic so we did....in the backyard!

I cannot believe that it was just a week ago that I was in VA visting my cousin and now that Frankenstorm is coming through. To my family and friends in Sandy path, I hope y'all stay safe and dry! I'll be thinking about you all today!

Virginia Wine Trail

Happy Friday everyone!! TGIF! Today I'm recapping day 2 of my trip, which was probably my most favorite day on the trip. It was a real adventure and we got to bring Chloe along, my cousin Michele's dog!!  On Saturday we made our way out west. There are a ton of wineries within a 15-20 mile radius! Prepare yourself for picture overload, I mean it's Friday so who does not want to look at a ton of pictures...right? RIGHT!

The first place we stopped at was Barrel Oak Winery. This was a great starter place and they were SUPER DOG friendly!! We had a great time here!!

Let me just say that this property was BEAUTIFUL and totally for sale?! Oh the possibilities!!! Anyone want to buy it together, I mean it just a couple million, no big deal!

After all of our wine excursions we made our way into Middleburg! I fell in love with this little place and it was so hard to leave. Everything here was super super cute! I want to make a trip back here in the near future!
